Ingredients
- 1/4 cup lime juice
- 1 1/2 tsp lime zest (about 1 lime)
- 1 cup soy milk(plain or vanilla)
- 1/4 cup veg oil
- 2 tsp tequila
- 1/2 tsp vanilla extract
- 1 cup sugar
- 1 1/3 cup all purpose flour
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 2 tbsp potato startch
- 1/2 tsp salt
- 1 pint fresh raspberries
Preparation
Step 1
preheat ovento 350
2. in a large bowl, mix together lime juice, zest, soy milk, oil, tequila, vanilla, starch and sugar
3. in a bowl measure flour, soda, powder and salt and sift together
4. add the dry ingredidents to the lime mixture and stir until just combined
5. gently fold fresh raspberries into the batter with a rubber spatula.
6. pour into trays,filling 3/4 of the way to the top
7. bake for 20 -24 min using toothpick to test
8 let cool for 5 min and place on rack
Tequila lime frosting
1/4 c salted butter room temp
1 tbsp soy milk
3 tbsp lime juice
1 tbsp tequila
2 cups of powder sugar (may add more as needed)
Beated together butter, milk and lime juice, tequila and 2 cups of sugar until smooth and creamy
if the frosting is too thin wait 5 min, add more sugar very slowly. the frosting should be stiff , but spreadable. If the frosting becomes too thick add more lime juice or milk. spread on cakes
