Patti Daniel’s Spinach Salad

Ingredients

  • Dressing:
  • ½ cup Swiss cheese
  • ½ tsp. dry mustard
  • 3 hard-boiled eggs
  • 1 Tbsp. poppy seeds
  • ½ lb. bacon
  • 1 tsp. salt 1 bag spinach
  • 1 cup oil
  • ½ cup red wine vinegar
  • 1/3 cup sugar
  • 2/3 cup mushrooms
  • ¼ cup green onions

Preparation

Step 1

Let mushrooms and onions marinate in dressing overnight. Grate Swiss cheese and sprinkle over fresh spinach that has been washed and de-stemmed. Grate the hard boiled eggs and sprinkle over spinach. Cook bacon, crumble, and sprinkle over spinach. Pour the dressing over the salad. Toss, and serve.
