Baked Coconut Shrimp with Sweet and Sour Sauce

Ingredients
- Shrimp
- 3/4 cup panko
- 1 cup coconut
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 cup beer
- 1 egg white
- 32 large shrimp
- Vegetable oil
- Sauce
- 1/4 cup sweet and sour sauce
- 1 Tablespoon soy sauce
- 1 large scallion, minced
- 1/4 teaspoon ground ginger

Preparation
Step 1
Mix dry ingredients in a shallow dish. Mix beer and egg white in a second dish. Preheat oven to 400 degrees. Generously oil a rimmed cookie sheet. Dip shrimp into wet mixture. Transfer to coconut mixture and coat generously. Place on prepared cookie sheet. Repeat with remaining shrimp.
Place in oven and bake until pink (about 10 minutes) if using uncooked or 5 minutes if using pre-cooked shrimp. Serve hot with dipping sauce.
To prepare sauce, combine all ingredients and mix well.
