Ingredients

  • 1.5 lbs lean ground beef
  • 1 lrg onion (cut up/diced)
  • 3 cans of Tamales
  • 1 can Tomato with rice soup (if you can find it, if not use Tomato soup)
  • 1 can pitted black olives
  • 1 can Mexican style corn
  • 1-2 bags shredded cheese (your choice...my favorite is Cheddar with Colby or Mozzarella)
  • (the amount you use depends on how cheesy you want it)

Remove tamales from the can and unwrap each tamale. They are usually wrapped in a thick waxed paper. If there is any grease with the tamales, remove as much as possible, but keep the sauce. Once all tamales are unwrapped, mash them with a potato masher or you can use a fork but it takes longer. Once meat is browned & drained, add to the mashed tamales. Then add other ingredients. And bake as directed above.

In large skillet, brown ground beef with onion and season to taste (garlic,salt, pepper, chili powder). Cook til just browned. Drain if necessary. In skillet or large bowl, combine with meat the soup, corn, and half the cheese. Mix well. If mixture seems a little dry, add more soup or some diced tomatoes. Transfer mixture to a 9 x 12 baking dish and level mixture. Add in pitted olives, pushing into the meat mixture as much or a little as you want. Bake at 375 degrees for about 1 hour. 15 minutes before done sprinkle remaining cheese to top of mixture and continue baking. Let cool for about 15 to 20 minutes, then devour !! Easy and delicious!! Serve with a salad.
