Ingredients
- 1/4 c. water
- 2 T. vinegar
- 2 T. vegetable oil
- 1 lb. boneless, skinless chicken breast, cut into thin strips
- 1 pkg. fajita seasoning
- 2 c. shredded mixed Monterey Jack and Cheddar cheeses
- 3 green onions, thinly sliced
- 8 large flour tortillas
Preparation
Step 1
Combine water, vinegar, oil and Fajita seasoning in large plastic bag of glass dish.
Add chicken to marinade and let stand 5 minutes.
Remove chicken from marinade.
In large skillet over medium-high heat, saute 5 minutes or until done.
Discard remaining marinade.
Put chicken strips in single laver on 4 flour tortillas.
Sprinkle each with cheese and green onion.
Top with another flour tortilla and sprinkle with additional cheese and green onion if desired.
Place on foil-lined baking sheets.
Cover loosely with foil and bake in 350 oven 10 minutes or until cheese melts.
Cut into wedges to serve.
Serve with salsa, gaucamole and sour cream if desired.
