Grilled Thai Sweet and Spicy Shrimp Pizza

Ingredients

  • For the shrimp: 5 tbsp light mayonnaise 3 tbsp Thai Sweet Chili Sauce 1 tsp Sriracha 1 lb large shrimp, shelled and deveined (weight after peeled) 2 tsp cornstarch 1 tsp canola oil
  • For the pizza: 2 Archer Farms Fire Roasted thin square pizza crust 1 1/2 cups reduced fat mozzarella cheese Cooking spray 2 tbsp scallions, chopped 2 tbsp cilantro leaves

Preparation

Step 1

1. In a medium bowl, combine mayonnaise, Thai sweet chili sauce and Sriracha; set aside.

2. Coat the shrimp with cornstarch, mixing well with your hands. Heat a large skillet or wok on high heat; add oil. When oil is hot, add the shrimp to pan and cook tossing a few times until cooked through, about 3-4 minutes. Remove from pan and combine with the sauce coating.

3. Place 3/4 cup part-skim mozzarella on each pizza crust. Divide the shrimp between two crusts.

4. Preheat the grill, leaving half of the burners off for indirect heat. When the grill is hot, clean the grates and lightly spray with oil so the crust doesn’t stick. Place one pizza on the grill and close the grill. Grill directly on the grates for about 8 to 10 minutes or until the crust is golden and the cheese is melted. Remove from the grill, and top with fresh scallions and cilantro

5. Repeat with the second pizza, slice and enjoy!
