David's Baked Corn Casserole

Ingredients

  • 1 box corn muffin mix
  • 14 oz can creamed corn
  • 2 cups fresh corn (cut from the cob)
  • OR 14 oz can whole kernel corn (drained)
  • 1 stick butter (softened)
  • 1 cup sour cream
  • 1 egg

Preparation

Step 1

In a large bowl, combine all ingredients and mix thoroughly. Pour into a greased 3-qt. casserole dish. Cover and bake at 350°F for 55 – 60 minutes. Uncover and bake another 10 minutes until the top is crusty and golden brown.

Tip: Garnish with diced red and green peppers.
