Goat Cheese Arugula Pizza
By gnoll
This is super yummy. I substituted feta cheese for the goat cheese (of course). The first time I made this I didn't read the directions through and put the arugula on the pizza before I cooked it and it was still very good!

Ingredients
- Prepared pesto sauce
- 1 unbaked pizza crust (I used low-carb flat bread wraps)
- seasoned goat cheese (I substituted feta)
- Roma tomatoes (I sliced grape tomatoes)
- 2 cloves garlic, minced or sliced
- fresh arugula
- lemon juice
- pepper
Preparation
Step 1
Preheat oven according to crust directions. (I did 450 degrees for the flatbread) Spread pesto sauce onto crust. Crumble cheese over sauce. Arrange tomatoes over cheese. Bake according to package (I baked flatbread 8 min). Toss arugula with lemon juice, garlic and pepper. After taking pizza out of oven allow to cool for a few minutes for cheese to set and then cover pizza with a few handfuls of arugula. Cut, serve and enjoy!
