Raisin Crisscross Cookies

Ingredients
- 1/2 C Butter,
- softened
- 3/4 C Sugar
- 1 Egg
- 1/2 tsp Lemon Extract
- 1 tsp Lemon Rind
- 1.3 /4 C Sifted Flour
- 3/4 tsp Cream of Tartar
- 3/4 tsp Baking Soda
- 1/4 tsp Salt
- 1 C Golden Raisins
- 1/2 C Chopped Nuts,
- Pecans or Walnuts

Preparation
Step 1
Bake 400º. Heat oven.
Sift together flour, cream
of tartar, baking soda and salt;
set aside.
In large mixer bowl, mix
butter and sugar until fluffly.
Add egg, lemon extract and
lemon rind. Add flour mixture,
blend well. Mix in raisins & nuts.
Roll batter into the size of a
small walnut. Place 3" apart on
ungreased cookie sheet. Flatten
with a fork that has been dipped
in flour, making a crisscross
pattern. Bake 10-12 minutes or
until light golden color.
Cookies don't get brown.
This recipe can be doubled.
My family does not like raisins
in their cookies. I increase
the nuts to 1 cup.
