Tortellini, White Bean & Spinach Soup

Ingredients

  • 1 tsp Olive Oil
  • 2 C Chopped Onion
  • 1/2 C Red Pepper,
  • chopped
  • 1 tsp Dry Italian
  • Seasoning
  • 3 Cloves Garlic,
  • chopped
  • 2 C Spinach,
  • coarsley chopped
  • 2/3 C Water
  • 1-16 OZ can White Beans
  • Cannellini-Great Northern
  • Drained
  • 1-14 OZ Can Vege Broth
  • 1-14 OZ Can Diced NO-Salt
  • Tomatoes & Juice
  • 1-9 OZ Fresh Cheese
  • Tortellini, uncooked
  • 1/4 C Parmesan Cheese

Preparation

Step 1

Heat oil in large dutch oven
over medium high heat. Add onion,
red pepper, Italian seasoning and
garlic. Saute 5 minutes or until
tender. Add spinach, water, beans
broth, and tomatoes. Bring to a boil.
Reduce heat, simmer 2 minutes.
Add tortellini and cook until
thoroughly heated. Sprinkle with
Parmesan Cheese.
