Ingredients
- 1 T crab-boil seasoning
- 1 lb large shrimp, deveined and peeled
- 1 t lemon zest
- 1/2 t ground pepper melange
- 1 pkg (8oz) reduced-fat cream cheese
- 3 T prepared pesto sauce
- 2 T light mayonnaise
- 1 tube (1 lb) prepared polenta
Preparation
Step 1
Bring 1 qt of water and crab-boil seasoning to a boil
Add shrimp, cook 2 min or until shrimp turns pink, drain
Toss shrimp with lemon zest and pepper melange, set aside
In a bowl, combine 3 ingr. chill
Slice polenta into 1/2 " rounds
In skillet coated with cooking spray, brown polenta on each side about 2 min. Spoon 1 t pesto mixture onto polenta round. Top rounds with shrimp
