Ingredients
- Rub:
- 1 1 1 cup brown sugar
- 1/2 1/2 1/2 cup paprika
- 2 1/2 2 1/2 1/2 tablespoons ground black pepper
- 2 1/2 2 1/2 1/2 tablespoons salt (I prefer kosher)
- 1 1/2 1 1/2 1/2 tablespoons chili powder
- 1 1/2 1 1/2 1/2 tablespoons garlic powder
- 1 1/2 1 1/2 1/2 tablespoons onion powder
- 1 1 teaspoon 1 -2 teaspoon cayenne
- 3 3 3 pork spare rib racks (3 pounds or less each)
- 1 1 1 can lager beer (optional)
- Glaze:
- Ingredients
- 2 2 2 cups Jack Daniel's Black Label or Bourbon
- 1 1 1 cup ketchup
- 1 1 1 tablespoon lemon juice
- 2 2 2 tablespoons Worcestershire sauce
- 2 2 2 tablespoons malt vinegar
- 4 4 4 tablespoons dark molasses
- 1/2 1/2 1/2 teaspoon liquid smoke (optional)
- Method
- 2 2) 1/2 30 1/3. cup of the whiskey and the other ingredients. Simmer over a low heat for 30 minutes and reduce it by about 1/3. Use it immediately or bottle it and keep it in the refrigerator for a month or more. Drink the remaining whiskey.
