BUTTER PIE CRUST

  • 1 1/3 cups unbleached flour
  • 1 tsp. sugar
  • 3/8 tsp. salt
  • 8 tbsp cold unsalted butter, preferable European style, cut into 3/4" pieces
  • 3 to 4 tbsp ice water

Preparation

Step 1

Put flour, sugar, and salt in a medium bowl and stir with fork to combine. AAdd butter to bowl. Use pastry blender to combine. Drizzle 3 tbsp ice water over flour mixture. Add 1 more tbsp, if necessary. Shape into a disc and wrap in plastic, chill for at least 1 hour,but preferable 2 to 4 hours, before rolling. Let sit at room temperature to soften slightly (5 to 20 minutes)-it should be cold and firm but not rock hard.
