Vanilla Bean Ice Cream

Ingredients

  • 3 C. Half & Half
  • 2 C. sugar
  • 3 C. heavy cream
  • 1 vanilla bean, split and scraped
  • 8 egg yolks

Preparation

Step 1

In a large saucepan combine half & half with sugar. Whisk together then warm up over low heat. In a separate large bowl, pour heavy cream. Add vanilla bean and scrapings to simmering half and half. Stir together. Beat egg yolks until light and fluffy. Drizzle ½ cup hot half and half to temper eggs. Pour all egg mixture into saucepan. Cook, whisking gently until it resembles a custard. Pour custard into bowl with cream. Stir together until combined. Chill at least 2 hours. Follow ice cream maker directions and store in freezer for a couple hours when finished.
