Peanut Butter & Jelly Bars

Today’s recipe is an easy crumb bar filled with a peanut butter and jelly center. You got it…I used the peanut butter cups for the peanut butter filling. I also used some blackberry jelly that was in our fridge, but you could use any jelly or jam that you have on hand. I think a strawberry jelly would be great with the peanut butter cups too.

Ingredients
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1 egg yolk
- 1 cup flour
- 1 cup quick oats
- 1/2 cup seedless blackberry jam (I used Smuckers)
- 12 peanut butter cups, chopped
Preparation
Step 1
Cream together the butter and sugar. Add the egg yolk and beat until creamy. Slowly add the flour and oats until crumbly. Press half the mixture into the bottom of an 8 inch baking pan that has been greased.
Spread the jelly over the dough in the pan. Top with the chopped peanut butter cups. Crumble the remaining dough over the top. Bake at 350* for 25-28 minutes. Cool completely before cutting into bars. Makes 12 bars.
