Peanut Butter Hidden Chocolate Cupcakes

Ingredients

  • 1 devils food cake mix
  • 4 eggs
  • 1/2 C. water
  • 1/2 C. canola oil
  • 8 oz. sour cream
  • 1 small pkg. chocolate pudding mix
  • 2 C. peanut butter
  • 1 1/2 C. powdered sugar
  • 8 oz. cream cheese, softened
  • 1/2 C. butter, softened
  • 3 C. powdered sugar

Preparation

Step 1

Preheat oven to 350 ̊F. Mix cake mix, eggs, water, oil, sour cream and pudding mix on medium for 2 minutes. Pour into cupcake pan (3/4 ways full). In a mixing bowl, mix peanut butter with 1 ½ cups powdered sugar until well combined. Form ½ inch balls and press into each filled cupcake. Bake for 20-30 minutes or until a toothpick comes clean from center. Let cool completely. Beat cream cheese and butter until creamy and well combined. Slowly beat in remaining powdered sugar until well combined. Spread over cooled cupcakes. Sprinkle if desired.
