BBQ Chicken Polenta with Fried Egg

Ingredients

  • 2 c shredded cooked chicken breasts
  • 3/4 c bbq sauce
  • 1 tbsp minced fresh cilantro
  • 2 tbsp olive oil
  • 1 tube polenta sliced into 8 pieces
  • 1 small garlic clove, minced
  • 4 eggs

Preparation

Step 1

In a small saucepan, combine the chicken, bbq sauce and cilantro. Heat through over medium heat, stirring occasionally.

In a large skillet, heat 1 tbsp oil over medium high heat. Add polenta, cook 2-3 mins on each side or until lightly brown. Transfer to a serving plate. Keep warm.

In same pan, heat remaining oil over medium heat. Add garlic; cook and stir 1 min. Break eggs, one at a time into the pan. Reduce heat to low. Cook until desired doneness, turning after whites are set, if desired. Serve over polenta with chicken mixture.
