Linguine with White Clam Sauce

This is not just for diets. It is a family favorite. It is often requested and it is Donna's favorite of all.

Ingredients

  • 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup chopped onions or shallots
  • 1/4 cup fresh sliced mushrooms
  • 3/4 teaspoon thyme (2 tablespoons fresh)
  • 1 tablespoon chopped fresh parsley
  • 1/4 cup chopped green pepper
  • 1 canned chopped clams, 6 or 7 ounces, reserve liquid
  • 1/4 cup Parmesan cheese
  • dash cayenne pepper
  • freshly ground black pepper
  • cooked linguine

Preparation

Step 1

Sauté onion, green pepper and garlic in olive oil.
1. Add mushrooms and cover for 3 minutes.
2. Add remaining ingredients including liquid from clams and heat through.

Serve over hot cooked linguine.
