Oaxacan Guacamole

Ingredients

  • 3 cloves roasted garlic
  • 1/2 white onion, roasted diced
  • 1 serrano chile (remove seeds for milder taste), diced
  • 4 roasted tomatillos, diced
  • 2 Tablespoons finely chopped cilantro
  • juice from 2 limes
  • 3 ripe avacados, chopped
  • salt to taste

Preparation

Step 1

To roast garlic, onion, and tomatillos, brush with oil and place in a baking tray and roast in the oven (or grill) for 25-30 minutes at 350.

Grind garlic using mortar and pestle, add chile, onions, tomatillos, cilantro, salt and lime juice. Continue mashing until well blended.

Add avocados and use the mortar to blend all ingredients until smooth.
