Hot Hominy Casserole

Cheesy and spicy never tasted so good! Hot Hominy Casserole is a great vegetarian casserole to have on it's own, or use it as a side to any meal.

Ingredients

  • 2 (15.5-ounce) cans yellow or white hominy, drained
  • 1 (4-ounce) can green chilies
  • 1/2 cup grated onion
  • 1 (8-ounce) carton low-fat sour cream
  • 1 1/2 cups sharp Cheddar cheese, grated
  • 6 bacon, cooked and crumbled (optional)
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon pepper

Preparation

Step 1

Preheat oven to 350°F.

Combine all ingredients, except cheese, and spoon into a lightly greased 8-inch square casserole dish.

Sprinkle cheese evenly over the top. Cover with foil and bake 20 minutes.

Remove foil and bake an additional 10 minutes, until golden and bubbly.
