Fried Onion Rings

Ingredients

  • 1 extra large onion
  • 3 cups water
  • 2 cups milk
  • 4 cups flour
  • 2 tsp salt
  • 1/8 tsp cayenne pepper
  • 2 large eggs
  • Vegetable oil (for deep-frying)

Preparation

Step 1

Peel and slice onion into 3/4" thick slices. Separate slices into rings. Place in medium bowl. Pour 3 cups water and 2 cup milk over onion rings. Cover with plastic wrap and refrigerate overnight.

Whisk flour, salt and cayenne pepper in medium bowl to blend. Whisk remaining 1 cup milk and eggs in another medium bowl to blend.

Pour enough oil into heavy large deep pot to reach depth of 6". Heat oil to 350F. Working in batches, remove onion rings from milk mixture. Dip into flour mixture, then into egg mixture, then back into flour mixture again. Place coated onion rings on baking sheet. Working on batches, fry onion rings until golden brown, turning once, about 3 mins. Using tongs, transfer onion rings to paper towel lined plate to drain. Serve warm.
