Elegant Salmon

Ingredients
- 4 salmon steaks
- 3/4 cup pineapple juice
- 1/4 cup soy sauce
- 3 to 4 tblsp honey
- 2 tblsp olive oil
- 3 tblsp prepared horseradish
- 2 tblsp fresh parsley
- 1/2 tsp black pepper
- 1 tblsp minced garlic

Preparation
Step 1
In a small bowl, combine all ingredients. Move to long shallow bowl, place salmon inside, and refrigerate for 1 hour. Turn steaks over, and refrigerate for another hour.
Turn smoker on high, and brush a soaked paper towel in vegetable oil over the grates to avoid any sticking. Take steaks out, and reserve remaining juice for. Once smoker reaches 400 degrees, turn down to smoke level. Place steaks on grill skin side down and smoke for 3 to 4 hours until fish is firm.
Bring remaining marinade to a boil, and let it simmer until it gets to a sauce like consistency. Turn grill off, and allow steaks to cool completely. Remove steaks when done, pour remaining sauce over top, and top with either sliced lemons or chopped scallions
