POTATO PIZZA WITH HAM & PEPPERS

This quick baked supper or lunch dish never fails, thanks to the pre-simmering of potato slices. Serves six with a tossed mixed green salad.

Ingredients
- 4 medium potatoes, thinly sliced
- 1 medium onion or leek, thinly sliced
- 1 sweet red pepper, thinly sliced
- 4 oz.(125g) ham or pepperoni, cut in thin strips
- 1 tbsp.(15mL) olive oil
- 1/4 tsp.(2 mL) garlic salt
- 1/4 tsp.(2 mL) ground black pepper
- 8 oz.(250g) Mozzarella or mixed cheeses, shredded
Preparation
Step 1
In a saucepan of boiling water, simmer sliced potatoes for eight minutes; gently drain in a colander. Heat oven to 450°F(230°C). Grease or spray a 10-inch/25-cm pie plate with non-stick cooking spray.
In a bowl, toss together potatoes, onions, red pepper, ham, olive oil, garlic salt and pepper. Spread mixture evenly in prepared dish and sprinkle top with cheese. Bake, uncovered, at 450°F(230°C) for 20 minutes or until potatoes are tender and cheese is golden brown.
Notes: If you don't use garlic salt, crush 1 small fresh clove garlic and add 1/4 tsp/2 mL salt.
