Ingredients
- 2-4 salmon fillets or steaks
- 1 (6 oz.) jar Pesto sauce
- 1-2 pkgs. fresh fettuccine
- 1/2 - 1 c. chopped, seeded tomato
- 2-4 tbsp. butter
- 2-4 tbsp. chopped fresh chives (or 1 tbsp. dried)
- 1 tsp. grated lemon rind or dried lemon and pepper seasoning to taste
- Salt and pepper to taste
Preparation
Step 1
Brush both sides of salmon with Pesto sauce. Grill or broil until done (4-5 minutes per side on grill until fish flakes when tested with a fork). Cook fettuccine according to package. Toss with tomato, butter, chives, and lemon rind. Season to taste and keep warm. Heat remaining Pesto sauce and pour over fettuccine and toss.
