LEMON CAKE PIE

Ingredients

  • 1 cup sugar
  • 1/4 cup flour
  • 1/4 cup butter or margarine melted
  • 1/8 teaspoon salt
  • 2 eggs separated
  • 2 lemons, juice and grated peel
  • 1 cup milk
  • 1 9" unbaked pie shell

Preparation

Step 1

Combine sugar, flour, butter or margarine, salt and egg yolks. Beat until smooth. Beat in lemon juice and peel. Add milk, beating slowly. Beat egg whites until stiff but not dry, fold in. Bake pie shell at 350 degrees for 5 minutes. Pour in filling. Bake 40 minutes or until filling is firm. When cut there will be a delicate cake on top of the pie filling.
