  • 4 QUARTS OF PEELED, CORED, CHOPPED RED RIPE TOMATOES (ABOUT 24 LARGE) OR 4 QTS OF CRUSHED TOMATOES WITH PUREE
  • 2 CUPS OF FINELY CHOPPED CELERY
  • 2 CUPS OF FINELY CHOPPED ONION
  • 1 1/2 CUPS CHOPPED SWEET GREEN OR RED PEPPERS ( ABOUT 2 MEDIUM)
  • 1 CUP BROWN SUGAR
  • 1/2 CUP OF GRANULATED SUGAR
  • 1/4 CUP OF MOLASSES
  • 2 TBSP BLACK PEPPER
  • 2 CLOVES OF FINELY CHOPPED MINCED GARLIC
  • 1 TBSP PAPARIKA
  • 1 TBSP SALT
  • 1 1/8 TSP CAYENNE PEPPER
  • 1 CUP VINEGAR
  • 2 TBSP LIQUID SMOKE

COMBINE ALL INGREDIENTS IN A SLOW COOKER / ROASTER OVEN AND COOK ON 250 DEGREES STIRRING OCCASIONALLY FOR 12 HOURS. FOLLOW MANUFACTURER'S INSTRUCTIONS FOR PREPARING JARS, LIDS, AND BANDS .POUR INTO HOT STERILIZED JARS AND PROCESS HALF PINTS AND PINTS FOR 20 MINUTES IN A BOILING WATER BATH.
