Ingredients
- 1 lb. bowtie pasta
- 2 garlic cloves, minced
- 3 Tbsp. EVOO
- 1/2 tsp. basil
- 1 Tbsp. butter
- 1/2 tsp. oregano
- 3 C. ham, diced
- 1 1/2 C. chicken broth
- 1 red bell pepper, diced
- 1 Tbsp. lemon juice
- 1/2 onion, diced
- 3/4 C. parmesan cheese
- 1/4 C. parsley
Preparation
Step 1
Cook pasta according to box. Meanwhile, in a large skillet, heat butter and olive oil over medium heat. Add pepper, onion and garlic to skillet and cook until tender, about 4-6 minutes. Add ham, basil and oregano and cook 2-3 minutes. Stir in broth and lemon juice. Bring to a boil. Reduce heat and let simmer uncovered for 10 minutes. Sir pasta into ham mixture. Add ½ cup cheese and stir. Top with parsley and remaining cheese.
