Ritz Cracker Pecan Pie

Ingredients

  • 3 egg whites
  • 1/2 tsp baking powder
  • 1 cup sugar
  • 1/2 tsp vanilla
  • 20 ritz crackers
  • 3/4 pecan pieces

Preparation

Step 1

Preheat oven to 325 degrees.

Butter 9-inch pie pan.

Beat eggs with baking powder until stiff. Add sugar and vanilla. Mix well. Fold in crackers and pecans.

Pour into pie pan. Bake for 30 minutes. Cool for 1 hour.

*If making 2 pies, make sure to clean bowl between pies, otherwise eggs won't stiffen.
