Panettone chocolate pudding

I'm not much of a cake eater, so the panettone that inevitably turns up generally gets made into a pudding. You've probably got the other ingredients too. This is very rich,so you're unlikely to feel like eating much in one go.

Ingredients
- 150 g panettone, cut into 1-2 cm slices
- A good knob of butter, melted
- 3 whole eggs
- 6 egg yolks
- 60 g caster sugar
- 350 ml double cream
- 250 ml milk
- 2 tbsp good quality cocoa powder
- 100 g good quality dark chocolate, chopped into pieces 3-4tbsp melted marmalade, or apricot jam to glaze
Preparation
Step 1
Pre-heat the oven to 180C/gas mark 5.
Lightly butter an oven-proof dish measuring about 25 x 20 cm and roughly 5-6cm deep.
Scatter the pieces of chopped chocolate in the bottom then lay the slices of panettone over the top overlapping and covering the whole dish.
Bring the cream and milk to the boil and whisk in the cocoa powder.
Mix the eggs, egg yolks and sugar together then pour over the milk and whisk until well mixed.
Pour this chocolatey custard over the panettone.
You'll need to have a deep tray such as a roasting pan larger than the panettone dish.
Stand the smaller pudding dish in the tray and pour in boiling water three-quarters of the way up the dish.
Bake for 35-40 minutes, until the custard has just set. Remove from the tray and leave to cool a little. Brush the melted jam or marmalade over and serve.
