Breakfast Muffins

Ingredients

  • 1 egg
  • 2 mashed bananas (nuts optional) or 1 C. applesauce (raisins optional)
  • 1/4 C. water
  • 1/2 C. brown sugar
  • 1/3 C. shortening
  • 1 tsp. salt
  • 1 tsp. baking soda

Preparation

Step 1

Preheat oven to 400 degrees.
Beat egg, add fruit, water, sugar and shortening and continue beating.
Add dry ingredients and stir until moist.
Bake at 400 degrees for 20 min.
