Lemon Squares

Ingredients

  • 1 c. all-purpose flour
  • 1/2 c. butter or margarine, softened
  • 1/4 c. confectioners’ sugar
  • 2 eggs
  • 1 c. granulated sugar
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 tbsp. lemon juice

Preparation

Step 1

Heat oven to 350 degrees.
Mix flour, butter and confectioners' sugar thoroughly.
Press in ungreased square pan, 8x8x2 inches, building up a ½-inch edge.
Bake 20 minutes.
Beat remaining ingredients about 3 minutes or until light and fluffy.
Pour over hot crust.
Bake about 25 minutes longer or just until no imprint remains when touched lightly in center.
Cool: cut into squares.
