Tequilla Shrimp

Ingredients

  • 1/4 tsp salt
  • 1/4 tsp ground red pepper
  • 1/4 tsp chili powder
  • 1/8 tsp cumin
  • 1/8 tsp black pepper
  • 1 1/2 pounds peeled and deveined shrimp
  • 1 tbsp oil
  • 3 cloves minced garlic
  • 1/4 cup tequila
  • 1 tbsp chopped cilantro
  • 2 cups cooked rice
  • 1/4 tsp salt
  • 1 tbsp oil
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro

Preparation

Step 1

Mix together 1/4 tsp salt, red pepper, chili powder, cumin and black pepper in a zip-lock bag.
Add shrimp to bag and coat.
Cook in oil for 3 minutes, turning once.
Add garlic and saute for 1 minute.
Add tequila and cilantro cook for 1 more minute.
Mix rice with 1/4 tsp salt, oil, lime juice, cilantro and serve with shrimp on top.
