Ingredients
- 2 pounds penne pasta
- 1 cup butter
- 2 tablespoons fresh garlic, diced
- 1/2 cup garlic, chopped and roasted
- 1/2 cup Parmesan cheese, grated
- 1 teaspoon lemon juice
- 2 tablespoons olive oil
- 1 pound chicken breasts, cut on 1-inch pieces
- 2 pounds broccoli florets, blanched and cooled
- 2 cups chablis
- salt and pepper to taste
Preparation
Step 1
In a large pan of boiling water, cook the penne according to package directions
Meanwhile, in a bowl, mix together the butter, garlic, roasted garlic, lemon juice and Parmesan cheese. Set aside.
Heat the olive oil in a large saute pan. Add the chicken and saute the chicken pieces until cooked through, about 5-7 minutes. Add the wine to deglaze the pan. Bring to a simmer and let cook until the liquid is slightly reduced. Add the butter mix and then the broccoli. Stir to mix. Season to taste with the salt and pepper.
Place the cooked pasta in a large serving bowl. Pour the chicken mixture over the pasta and serve immediately.
