Ingredients
- 2 medium zucchini
- 1/3 c panko breadcrumbs
- 1 tomato, chopped
- 1/4 c mixed chopped parsley and dill
- 2 Tbsp chopped walnuts
- 1 clove garlic, minced
- 2 Tbsp olive oil
- salt
- pepper
Preparation
Step 1
Split zucchini (lengthwise) and scoop out the seeds; season with salt.
Combine panko breadcrumbs, tomato, parsley, dill, walnuts, garlic, olive oil, and salt and pepper to taste.
Spoon into the zucchini; drizzle with olive oil.
Bake at 425 degrees, 25 to 30 minutes.
