Pannukakku -- Scandinavian Oven Pancake
- 6 eggs
- 2 cups milk
- 1 teaspoon salt
- 1 cup all-purpose flour
- ¼ cup sugar
- Fruit, whipped cream, butter & jam toppings
Preheat oven to 400 degrees. Beat eggs well. Add milk, flour, sugar and salt, beating continuously. Mixture will be consistency of thick cream. Butter generously two 9x9 inch pans and dust lightly with flour. Pour batter into pan and bake for about 20 minutes, or until lightly browned around edges with the top still pale. It should feel slightly fur to the touch; do not over bake. Cut in big squares and serve immediately. Serve with mashed fresh fruit (strawberries work wonderfully) and whipped cream.
