Rice Empress

Prepare 1 day ahead so that it will have time to set.

Ingredients

  • 1/2 Cup Rice
  • 3 Cups Cold Water
  • 2 1/2 Cups Hot Milk
  • 1/2 cup Sugar
  • 1 Teaspoon Vanilla
  • 2 Egg Yolks, beaten
  • 1 Envelope Plain Gelatin
  • 1/4 Cup Cold Water
  • 1/4 Cup Boiling Water
  • 1/4 Cup Chopped Glacé Fruits
  • 2 Tablespoons "Cognac or Grand Marnier
  • 1/2 Cup Whipping Cream

Preparation

Step 1

Put rice into saucepan with 3 cups cold water. Brig slowly to full boil, then drain. Put drained rice in top of double boiler with hot milk, sugar and vanilla. Cook over boiling water until very soft and creamy, about 1 1/2 hours, stirring occasionally. Cool slightly, stir in beaten egg yolks. Soak gelatin in 1/4 cup cold water; the dissolve in the boiling water. Add to rice mixture and stir well. Chill. Soak the glacé fruit in liquor. When rice mixture is beginning to set, stir in fruit and liquor. Gently fold in stiffly whipped cream. Pour into glass or china bowl; chill overnight. Decorate with a few glacé cherries, whole strawberries or toasted slivered almonds. Serve very cold.
