Double Shot Mocha Chunk Cookies

Ingredients

  • 1 cup butter
  • 2 cup brown sugar
  • 1/2 Tbsp baking powder
  • 2 tsp espresso powder
  • 1/2 tsp salt
  • 4 lg. eggs
  • 4 tsp vanilla
  • 1 1/3 cup cocoa powder (1-1/3 black,1-1/3 regular)
  • 3 1/2 cups flour
  • 2 cup semi-sweet chocolate chips
  • 2 cup white chocolate chips

Preparation

Step 1

Preheat oven to 350°F.
Lightly grease or line with parchment paper, two cookie sheets.
In a medium bowl, cream together the butter, sugar, baking powder, espresso powder, and salt. Add the eggs and vanilla, beating until smooth. Stir in the cocoa powder, then the flour; the dough will be stiff. Mix in the chips.
Drop by tablespoonfuls onto cookie sheet. Bake 10 min. Let cool on sheets for 3-5 minutes.
