White Chocolate Mousse

Ingredients

  • 180 g white chocolate, chopped finely
  • 300 ml thickened cream
  • 1 t gelatine powder
  • 1 T water
  • 3 eggs separated

Preparation

Step 1

Combine chocolate and cream in a medium heatproof bowl over a pan of simmering water until just melted.Cool to room temp
Sprinkle gelatin over the water in a small heatproof jug, stand in a small saucepan of simmering watter, stirring until gelatin dissolves.
Stir the egg yolksand gelating mixture into the chocolate mixture. Fridge for 15 minutes or until slightly thickened.
Whisk egg whites in a clean small bowl with an electric mixer until soft peaks form. Fold egg whites into chocolate mixture in two batches until just combined. Spoon mousse into four serving glasses. Fridge until firm, about 3 hours.
