Jalapeno-Cheddar Cornbread

Ingredients

  • 8-1/2 oz can creamed corn
  • 1 c yellow cornmeal
  • 3 eggs
  • 1 tsp salt
  • 1/2 tsp soda
  • 3/4 c buttermilk
  • 1/4 cup oil
  • 3 oz sharp cheddar, grated
  • 1 med. jalapeno, minced

Preparation

Step 1

Mix the wet ingredients, then the dry (but only about 2/3 of the cheese). Spray pan and bake @ 400 for 35 min. or until golden (add rest of cheese when 5-10 min. from done).
