Gazpacho

Ingredients

  • 2 large cans Italian plum tomatoes, drained & liquid reserved
  • 1 small onion, cut in chunks
  • 1 C. green pepper, cut in chunks
  • 1 C. cucumber, peeled, seeded & cut in chunks
  • 1 tbsp. crushed red pepper (Or substitute)
  • 1 clove garlic, sliced
  • 1 tsp. cumin
  • 1 tbsp. salt
  • Freshly ground black pepper to taste
  • 2 C. tomato or V-8 juice (or juice from canned tomatoes)
  • 1/4 C. olive oil
  • 1/4 C. wine vinegar

Preparation

Step 1

Blend everything except juices, olive oil to vinegar in a blender or food processor.
Add juices and mix well.
Just before serving add oil & vinegar.
Serve chilled with cup up peppers and cucumbers as garnish.
