Curried Pumpkin Soup

Great on Halloween night with Brie, french bread and white wine.

Ingredients

  • 2 tbsp. butter
  • 1 large sweet onion, finely chopped
  • 2 cloves garlic, through press
  • 1 tbsp. curry powder
  • 1 tsp. ground cumin
  • 1 (15 oz.) can pumpkin puree
  • 2 C. chicken broth
  • 1 C. cream

Preparation

Step 1

Melt butter in a large saucepan over medium heat.
Add onion, garlic curry, and cumin; sauté, stirring often, until onion is soft and fragrant.
Stir in pumpkin and broth.
Bring to a boil, stirring often.
Cover, and reduce heat to low.
Simmer for 25 minutes, stirring occasionally.
Add cream and heat through, stirring constantly.
