Ingredients

  • Dressing:
  • 4 boneless chicken breast halves
  • 1 cup unsweetened apple juice
  • 3 cups cooked wild rice or Uncle Ben's wild rice mix, prepared according to package directions
  • 1 cup seedless grapes
  • 1 1/2 cups chopped apple
  • 1/2 cup chopped celery
  • 3/4 cup slivered or sliced almonds
  • 1/2 cup chopped water chestnuts
  • 1 cup mayonnaise
  • 1/2 tsp seasoned salt (I use Lawry's)
  • 1/4 tsp cinnamon

Preparation

Step 1

Place breasts in large pan, add apple juice and water to cover. Simmer
until cooked through. Cool and chop. Gently mix with all other
ingredients. Whisk dressing ingredients together and toss lightly with
chicken mixture. Cover and chill about 30 minutes.
