Ingredients

  • 5-6

    yukon gold potatoes, peeled and sliced thin

  • 3-4

    onions, peeled and sliced thin

  • salt and pepper, to taste

  • 1

    t dried poultry seasoning - or -

  • 1

    T fresh sage and thyme, chopped fine

  • 1

    can low-sodium chicken broth

  • 1

    C grated Parmesan cheese

Directions

Preheat oven to 350. Grease a shallow baking dish. Alternating veggies, layer them in dish starting and ending with potatoes. In between layers, add seasoning. Pour broth over all and bake, covered, 35-40 minutes, or until potatoes are soft. During last 10 minutes of cooking, uncover and sprinkle with parmesan cheese. Bake until golden crust forms.
