Orange Chiffon Cake

  • 1 3/4 c all-purpose flour
  • 1 1/2 c sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • grated rind of one orange
  • 1/2 c vegetable oil
  • 6 egg yolks
  • 1/4 c orange juice
  • 1/2 c cold water
  • 1/2 tsp cream of tartar
  • 6 egg whites



Step 1

Mix together the flour,sugar,powder,salt and orange rind
Make a well in the center of the dry ingredients and add in this order:vegetable oil,egg yolks,orange juice and water
Beat until smooth
Add cream of tartar to egg whites in a large bowl and beat until the egg whites form very stiff peaks
Gradually pour the batter over the egg whites,gently folding in until just blended
Do not stir
Pour the batter into an ungreased 10" tube pan
Bake at 325 F for 55 min
Increase the heat to 350 F and bake 5-10 min longer
Invert the pan and let it hang to cool
When cake is cool,remove from the pan and set on a cake plate for frosting
