Quick & Hearty Gumbo

Ingredients

  • 2 c. Sliced Smoked Sausage
  • 1 can (14 1/2 oz.) diced tomatoes
  • 1 can (14 oz.) Chicken broth
  • 1 can (15.25 oz.) whole kernel Gold & White corn (drained)
  • onion (optional)
  • green pepper (optional)

Preparation

Step 1

1. Cook sliced sausage (and onion and green pepper if desired) in a large saucepan and drain.
2. Stir in tomatoes, broth and 1/2 cup water; bring to a boil.
3. Stir in corn and rice; cover and remove from heat.
4. Let stand 5 minutes

Serve with hot pepper sauce and season as desired.
