Pork with Strawberry Port Sauce
- 1 T butter
- 1 medium onion, finely chopped
- 3/4 tsp salt divided
- 1/4 tsp pepper, divided
- 1/2 C strawberry spreadable fruit or preferred flavor
- 1/8 C port wine or chicken broth
- 1 T balsamic vinegar
- 1/4 tsp ground mustard
- 1/2 C grape tomatoes, halved
- 1 T minced fresh basil
- 1 tsp lime juice
- 4 pork chops
In a large skillet, heat butter over medium high heat, add onions, 1/2 of salt and 1/2 of pepper, cook and stir until tender.
Stir in fruit, wine, vinegar dna mustard
Bring to a boil, cook and stir 3-4 minutes or until slightly thickened.
Add tomatoes, cook 2-3 minutes or until softened.
Stir in basil and lime juice
Moisten a paper towel with cooking oil, using lonb handled tongs, rub on grill rack to coat lightly
Sprinkle chops with remaining salt and pepper
Grill, covered, over medium healt or broil 4 in from heat 4-6 minutes on each side or until reads 145 degrees
Let stand 5 minutes before serving
Serve with sauce
