Ingredients

  • 2 tins kidney beans
  • 2 tins green beans
  • 2 tins yellow beans
  • 2 tins chick peas
  • 2 large green peppers cut into thin rings
  • 1 large red pepper cut into thin rings
  • 5 medium sweet salad onions
  • 1 c sliced pimento stuffed olives
  • Dressing
  • 400 ml salad oil
  • 400 ml vinegar
  • 2 oz sugar
  • small piece of ginger wrapped well in gauze and tied with string

Preparation

Step 1

Turn thoroughly drained kidney beans,green beans,wax beans and chick peas into a large container for marinating
Add green and red peppers and onions
Sprinkle with olive slices,reserving some for garnish
Mix all lightly
Shake together in a jar or covered bowl, the oil,vinegar and sugar
Pour over the bean mixture
Add ginger
Cover and marinate at least 5 hours
This will keep for months, stored in a cool place. Shake occasionally
to move the ginger around
