Creamed Spinach

Ingredients

  • 2 # spinach, chopped
  • 2 Tablespoon butter
  • 1/2 cup shallots, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon nutmeg (DON'T DOUBLE)
  • 1/2 cup heavy cream

Preparation

Step 1

Wash and dry the spinach; chop.

Throw all of the spinach in a pot of salted water and cook.

Drain well and set aside.

In a large pan combine the butter, shallots, garlic; sauté. Add in the spinach, salt, pepper, nutmeg and heavy cream. Cook down until the liquid is decreased by about half (4 - 5 minutes).

Can be made ahead, and reheated.
