Marinated Carrots

Ingredients

  • 1 pound carrots, peel, quartered and cut into 2-3 inch spears
  • 1 tablespoon sugar
  • 2 tablespoons sherry vinegar
  • 2 tablespoons extra virgin olive oil
  • Kosher salt

Preparation

Step 1

1. Boil carrots in lightly salted water and sugar for 5 minutes.

2. Rinse in cold water to refresh, and toss with vinegar, olive oil and salt.

Serve at room temperature or cold.
