Ingredients
- 1 lg sweet onion, sliced
- 2 lb boneless leg of lamb or lamb stew meat, cut into 1 1/2 inch pieces
- 1 cup each dried apricots and prunes
- 1 tbsp each minced garlic and pumpkin pie spice
- 1 tsp kosher salt
- 1/2 tsp freshly ground pepper
- 1 bay leaf
- 1 can chicken broth
- 1 can tomato paste
- 3 med sweet potatoes, scrubbed
- 1 box couscous
- 1/4 cup toasted slivered almonds

Step 1
Mix lamb, apricots, prunes, garlic, spices and bay leaf in large slow cooker. In bowl, whisk broth and tomato paste, pour into crock pot, nestle sweet potatoes into stew. Cover and cook on high 5-6 hours, or 7-9 on low until lamb and potatoes are tender. Remove potatoes and bay leaf, cut potatoes into wedges.
